Boil-up traditionally is a broth made from a balanced combination of meat and pork bones, bacon bones, lamb chops, or any type of meat, with greens such as pūhā, watercress or cabbage, and kūmara, spuds, boiled together, along with flour dumplings known as "doughboys".
